Yields 4 servings
1/4c 100 percent orange or pineapple juice
1c lowfat vanilla yogurt
1/2c low-fat granola
In a large bowl, mix the blueberries, raspberries, strawberries and juice. Let them marinate in the refrigerator for 15 minutes.
In each of four small cups or bowls, layer 1/4c yogurt, 1/2c of the fruit mixture, and 2 tbsp of the granola. Serve cold.
Granola can often be fattening. Read labels carefully to find granola that is low in fat and sugar. The Bear Naked brand makes a few versions that have pretty decent stats. Alternatively, you can make your own.
