Baked Lemon Cod

Yields 3 servings

Ingredients
12oz fresh cod
2 tsp. olive oil
4 tsp. lemon juice
1 tsp. grated lemon rind
1/8 tsp. lemon pepper
2 tsp. dried parsley

Instructions
Preheat the oven to 350 degrees. Spray an 8X8-inch pan with cooking spray and place fish in the pan in a single layer.

In a bowl, mix the olive oil, lemon juice, lemon rind and lemon pepper. Pour over the fish. Sprinkle with the dried parsley.

Cover the baking dish with aluminum foil and bake for 20 minutes or until the fish flakes easily with a fork. Serve immediately.
