Baked Mahi Mahi with Tomato-Corn Salsa

Yields: Four servings

Ingredients: 

Fish

4 pieces mahi mahi (6 oz each)
1 tbsp extra-virgin olive oil
Salt/pepper to taste

 

Salsa

2 medium tomatoes, chopped
1 medium green pepper, chopped
2 scallions, chopped
½ 15 ounce can black beans, drained and rinsed
½ 15 ounce can corn, drained and rinsed
2 tbsp white balsamic vinegar
5 cilantro leaves, chopped
Salt/pepper to taste

 

Directions:

  1. Preheat oven to 450 degrees F.
  2. Rub olive oil on bottom of a baking sheet and arrange fish on sheet. Add salt and pepper to taste. Cover fish with parchment paper and bake in oven for 12 minutes.
  3.  Meanwhile, combine all salsa ingredients in a separate bowl.
  4. Serve fish with salsa on top.
