Beet Salad with Almonds

2 lb. beets, fresh
1/2 c. Almonds, blanched and sliced
2 oz. soft Goat Cheese
1/2 c. fresh Sunkist Orange sections
1 c. Spring Mix Lettuce
3 oz. Extra Virgin Olive Oil
2 oz. Balsamic Vinegar
1/4 tsp. Salt and Pepper, mixed


Trim beets and wash thoroughly. Steam the beets until tender, and let cool. Cut the beets into bite size pieces. Mix the olive oil, vinegar, salt and pepper together and add to the beets; toss to coat evenly. Dollop small bits of goat cheese onto the beets. Add orange sections, lettuce and almonds, and toss gently to incorporate.
