Yields 5 servings of 1/2c each
2c unsweetened almond milk
1c dry quinoa
2.5 oz strawberries, sliced
2.5 oz fresh blueberries
2.5 oz raw pecans, halved
5oz pure maple or agave syrup (optional)
Bring milk and quinoa to a boil in a saucepan, reduce heat o low and simmer, covered for 15 minutes. Continue to simmer uncovered until most of the milk has been absorbed, about 5-7 minutes.
Remove from heat and portion into bowls. Garnish with berries and nuts. If desired, sweeten quinoa with pure maple or agave syrup (1 oz per serving).
