Broccolini Salad with Spring Onion Vinaigrette

Ingredients
2 bunches of broccolini
1/6 cup red wine vinegar
1/6 cup balsamic vinegar
1/2 cup olive oil
1/3 cup chopped green onions
1/3 cup red onion, finely diced
4 tsp. fresh lemon juice
Pinch sea salt and pepper

Instructions
Trim the bottom of the broccolini, blanch it in boiling salted water with a small amount of baking soda for 30-45 seconds, and immediately put it into ice water to stop the cooking process. The broccolini should still be slightly crunchy.

Combine all vinaigrette ingredients and mix thoroughly.

In a large bowl add broccolini and slowly stream in vinaigrette. Season with salt and pepper to taste.
