Carrot & Parsnip Fries

Yields 4 servings

Ingredients
4 large carrots
2 parsnips
1 tbsp. olive oil
1/2 tsp. Sea salt
Fresh ground pepper

Directions
Preheat oven to 400 degrees F. Wash and peel all vegetables. Cut carrots and parnips lengthwise into 1/2-inch wide “sticks”.

Put in a bowl and toss with olive oil and sea salt. Pour the contents of the bowl onto a rimmed pan. Grind pepper to taste onto vegetables.

Place in oven and cook for approximately 20-25 minutes, flipping halfway through. The vegetables will be done when the edges start to brown.
