Cashew Strawberry Crunch

Think of this snack as an open-face, gourmet PB&J. The thick, hearty rye crackers taste a little like your favorite whole grain cereal and offer fiber to help maintain digestive health; the nut butter is full of heart-healthy monounsaturated fats; and, the berries are high in antioxidants. This combination is a great way to keep the blood sugar stable, which will result in more energy for a longer period of time.

Yields 1 serving

Ingredients

1 tbsp cashew butter (or other nut butter of your choice)
1 Ryvita Fruit Crunch cracker (or several Triscuit crackers)
2 strawberries, sliced
A drizzle of honey

Directions

Spread nut butter on crackers and top with berries and honey.

Vary it! If you’re interested in a more savory snack, try swapping the nut butter and fruit for cheese and apples on the cracker, which will also provide a filling and nutritious option.
