Yields 8 servings
1/3c. liquid egg whites or the egg whites from 2 large eggs
1/2 c. all-purpose flour
1 tsp baking powder
2 tbsp. butter, melted
1 c. milk
1 tbsp. olive oil
1 onion, chopped
1.5 lbs fresh baby spinach
1/2 tsp. salt
16 oz. low-fat sharp cheddar cheese, grated
Preheat the oven to 350 degrees.
In a large mixing bowl, beat the egg, egg whites, both flours, baking powder, butter and milk. Set aside.
In a large pot or Dutch oven, heat the olive oil and add the onions and garlic. Saute the onions a few minutes, until glassy.
Add the spinach and salt, toss with the onions and cover for 2 minutes.
Uncover the pot and toss the spinach. Continue cooking until the spinach is wilted, approximately another minute.
Add the spinach mixture to the moist flour mixture and mix until well-combined.
Add the cheese and mix until well combined.
Spray a 9X9 inch baking dish with cooking spray, and then pour the mixture into the baking dish.
Bake 25 minutes or until the center is set.
Cool slightly before cutting.
