Yields 4 servings
2 ripe mangoes, diced
½ ripe papaya, diced
1 jalapeño pepper, minced
2 tablespoons fresh orange juice
2 tablespoons fresh lime juice
3 tablespoons finely diced red pepper
2 tablespoons diced red onion
2 tablespoons diced cilantro
1 tablespoon extra-virgin olive oil
4 boneless, skinless chicken breasts (3 ounces each)
Combine mangoes, papaya, jalapeño pepper, orange juice, lime juice, red pepper, onion, and cilantro in a bowl. Refrigerate until chilled. Heat olive oil in a skillet. Add chicken. Cook for 3 minutes on each side or until lightly browned.
Serve chicken on a platter and top with salsa. Add garnish if desired.
