Fresh Strawberry Bread

Yields 14 servings

Prep time: 10 minutes Cook time: 45-55 minutes

1-3/4 c. whole-wheat flour
1/2 c. sugar
1 tsp. baking soda
1/4 tsp. nutmeg
2 eggs
1 6-oz. container of strawberry yogurt
1/4 c. butter, melted and cooled
1 tsp. vanilla extract
2 c. strawberries, hulled and coarsely chopped

Preheat the oven to 350 degrees and grease a 9X5 inch metal or glass loaf pan and set aside.

In a large bowl, combine the flour, sugar, baking soda and nutmeg.

In another large bowl, whisk together the eggs, yogurt, butter and vanilla.

Add the dry ingredients to the wet ingredients, and mix until well blended. Then fold in the strawberries.

Pour the batter into the prepared loaf pan. Bake for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean.

Cool for 10 minutes and then transfer to a wire rack. Serve warm or cooled.
