Yields 6 cups
1-28 oz. cans tomato sauce, low sodium
1-14 oz. can diced tomatoes, low sodium (pulse in food processer until blended)
½ cup diced onions
2 tbsp. chopped garlic
2 tsp. dried basil
2 tsp. oregano
1-1/2 tsp. thyme
1-1/2 tsp. ground fennel
¾ tsp. crushed red pepper flakes
¾ tsp. granulated garlic
¾ tsp. onion powder
¼ cup of red wine
Sauté onions until caramelized, add in garlic and sauté until fragrant. Add wine and allow to reduce until the majority of the liquid is absorbed. Add remaining ingredients and simmer 1 hour to allow all flavors to meld.
Serve with your favorite Italian recipe, or freeze it in a freezer-safe container.
