Grilled Portabella Pizza

1 portabella mushroom, grilled
2 tbsp. marinara sauce
4 slices of pepperoni
1 tbsp. red onion, chopped
1 tbsp. yellow pepper, diced
1 tbsp. sliced mushrooms
1 tbsp. tomato, diced
1 tbsp. mozzarella cheese
1 oz. Parmesan cheese, grated
1 tbsp. fresh basil, cut into strips

Brush portabella cap with olive oil and grill until cooked through. Spoon marinara into portabella and spread. Top with a sprinkle of parmesan cheese. Layer pepperoni, onion, pepper and tomato. Mix remaining parmesan and mozzarella together and top pizza. Bake in the oven at 350 degrees for 7 minutes. Add fresh basil to taste.
