Holiday Bruschetta

Yields 8 servings (2 each)

Ingredients

2 cups oven roasted cherry tomatoes; cut in half
2 Tbsp chopped fresh Basil Leaves
1 tsp dried Oregano
1 Tbsp Extra-Virgin Olive Oil
1 tsp Garlic chopped
2 Tbsp Balsamic Vinaigrette
16 Slices (½ inch thick) baguette, toasted
2 oz crumble feta
3 oz julienne spinach

Directions

In medium bowl, mix tomatoes, basil, oregano, olive oil, garlic and vinaigrette. Place julienne spinach on top of each toasted bread slices. Add tomato mixture and top with a sprinkle of crumble feta. Garnish with fresh ground black pepper.
