Homemade Black Bean Burgers

Yields 8 servings

2 cans black beans, drained and rinsed
1.5 Tbsp. lime juice
1 1/4 cups cooked brown rice
1/3 cup red onion, diced
1.5 Tbsp. minced garlic
1/4 c. carrot, shredded
1.5 Tbsp. parsley, finely chopped
1/4 c. roasted red bell pepper, diced
1/2 c. rice flour
1/2 c. corn
3 Tbsp. olive oil
1 tsp. onion powder
1 tsp. garlic powder
1/2 tsp. paprika
1/2 tsp. oregano
1/2 tsp. ground pepper
1/2 tsp. kosher salt


Mix all ingredients except the corn in a large bowl until completely combined. Place mixture in food processor and mix until combined but still a little course. You may need to do this in batches depending on the size of your food processor. Pour mixture back into large bowl and mix in the corn.

Shape into 4 oz. patties (about 1/2 cup of the mixture), wrapping each individually in plastic wrap. Freeze the patties.

Spray a saute pan with non-stick spray and heat on medium. Sear each patty until crispy and brown on both sides and serve with your favorite toppings.

Tip! If you’d like to cook these on the grill, spray a sheet of aluminum foil with non-stick spray and cook the patties on the foil.

Vary it! Try using your favorite spices to customize this burger just the way you like!
