Maple Glazed Turkey Breast

Marinate time 24 hours
Prep and Cook time 2-3 hours

5 lbs turkey breast
¼ cups fresh sage leaves
½ lb. butter
½ cup salt
2 tbsp. pepper
6 onions
½ cup chopped garlic
1 ½ quarts apple cider

For the Glaze
1 ½ lbs. butter
4 cups maple syrup
1 cup lemon juice
Zest from 1 lemon

Combine the butter, sage, salt, pepper, onion, and garlic. Make a paste (robo coup). Gently loosen the skin from the meat with your fingers and smear half of the paste directly on the meat. Spread the remaining paste evenly on the skin. Cover and let sit overnight to marinade.

In a saucepan combine butter, maple syrup, lemon juice and zest, bring to a boil and let reduce. When it cools it will become a syrup.

Pour apple cider into the bottom of the roasting pan. Brush the turkey breast with glaze. Roast the turkey for 1.5 to 2 hours, turning half-way and basting again 2 more additional times with glaze, roast until the skin is golden brown and internal temperature registers 165 degrees.

When the turkey is done, allow it to rest at room temperature for 15-20 minutes before carving.
