Layer 2 Options: Mix beans, diced cucumber, shredded carrots, diced bell peppers, sliced radishes, edemame, chickpeas and/or green beans
Layer 3 Options: Mix diced tomatoes, diced red onion, corn, peas, sliced mushrooms, diced broccoli, quinoa and/or walnuts
Layer 4: Add greens such as spinach, mixed greens, kale, arugula
