Oatmeal Chocolate Chip Cookies

2 cup old-fashioned oats
1 cup flour (preferably wheat pastry flour)
¾ cup ground flaxseed
¼ tsp. salt
½ tsp. cinnamon
2 tsp. baking powder
½ cup mini chocolate chips
2 tsp. vanilla extract
1 cup pure maple syrup
½ cup natural almond or peanut butter

Preheat oven to 350° F.

Combine all dry ingredients in a large bowl. In another bowl, mix the wet ingredients (vanilla extract, maple syrup and nut butter). Add wet ingredients to dry ingredients. Stir to combine.

On a greased and lined (parchment paper) baking sheet, drop the dough into 24 even mounds.
Lightly press down to flatten. Bake for 12-15 minutes or until cookies are firm in the center.
