1 head green cabbage, sliced into rounds approx. 1 inch thick (they will look like circles)
Freshly ground black pepper
Preheat oven to 400 degrees F. Brush large rimmed baking sheet with olive oil. Place cabbage rounds on sheet in a single layer, brush with olive oil and sprinkle with salt and pepper.
Roast until cabbage is tender and edges are starting to brown, approx. 40 minutes.
