2 lb. Turkey Breast, skin-on, boneless
1/2 tsp. fresh Italian parsley, chopped
1/2 tsp. fresh thyme, chopped
1/2 tsp. fresh oregano, chopped
1/2 tsp. fresh chives, chopped
1/4 tsp. fresh tarragon, chopped
1/2 tsp. fresh basil, chopped
1 tsp. fresh garlic, peeled and minced
1 tbsp. extra virgin olive oil
1/4 tsp. salt and pepper mix
Preheat oven to 350 degrees F. Chop herbs together and combine with garlic, salt and pepper and oil to make a marinade. Rub marinade onto the turkey breast and place it skin side up on a shallow roasting pan giving enough room for each portion to cook evenly.
Place into oven and cook until the skin is golden brown and slightly crisp, approximately 1.5 to 2 hours. Internal temperature of turkey should be taken, turkey is done when an the internal temperature reaches 165F.
Once turkey is done cooking remove from oven and allow ot rest for 15 minutes before carving.
