Yields 6 servings
6 lemons (or enough for 1 cup of lemon juice)
Zest of 1 lemon
2 ripe peaches
1/2 c. agave nectar
5 cups filtered water
Zest one lemon peel, being careful not to zest any of the bitter white pith beneath the rind.
Combine agave nectar, 1 cup of water and lemon zest in a sauce pan. Bring to a boil over medium heat, stirring frequently. once mixture reaches a boil, cook for an additional 1-2 minutes until agave is completely combined with liquid. Set aside to cool.
Squeeze lemons to get 1 cup of lemon juice. Pour into a pitcher. Cut any remaining lemons into slices for garnish.
Remove pits from the peaches and place them in a blender. Blend until pureed. Strain the pulp and then stir it into the agave mixture. Pour the agave mixture into the pitcher. Add the remaining 4 cups of water.
Serve over ice with a piece of lemon.
Note: this fresh-tasting lemonade is not overly sweet. If it isn’t quite sweet enough for your taste, add a little extra agave nectar when serving, stirring it into your cup.
