Red Lentil Spread

Yields 16 servings

Ingredients

3 cups Vegetable Broth
2 cups Red Lentils
1 medium Onion, chopped (½ cup)
2 Tbsp finely chopped fresh Cilantro
2 Tbsp fat-free Sour Cream or Salad Dressing
1 Tbsp Lime Juice
1/8 tsp Pepper
1 tsp chopped Garlic
1 tsp Coriander
Baked Tortilla Chips, if desired

Directions

Cook all ingredients together for 40 minutes. Serve with baked tortilla chips or pita chips.

Note: Red lentils are higher in protein than brown lentils.
