Yields 8 2-oz. servings
1 tbsp. honey
2 tsp. olive oil
2 c. of mixed nuts (walnuts, almonds, pecans and cashews)
2 tbsp. raw sugar
1 tsp. coarse salt
1 tsp. ground cumin
½ tsp. coriander
1/8 tsp. cayenne pepper
In large non stick skillet, heat honey, oil, and 1 tablespoon water over medium heat. Add walnuts, toss to coat. Sprinkle sugar, salt, cumin, coriander, and cayenne over nuts.
Cook, tossing and stirring until the nuts are well coated and lightly browned, 2-3 minutes.
Transfer to a baking sheet to cool completely.
