Yields: 6 popsicles
1 cup greek yogurt
1 cup peach juice or orange juice
1 cup strawberries (can be frozen)
2-3 tablespoons honey
1/4 cup fresh mint leaves
Popsicle molds or:
Paper cups, popsicle sticks, and aluminum foil
1. Place all ingredients in bender and blend until smooth.
2. Pour mix into popsicle molds or paper cups until about 3/4 full.
3. If using paper cups, place a small square of aluminum foil, cut a slit in the center, and place over the top of each cup. Insert popsicle stick and wrap foil around all sides of the cup.
4. Place molds/cups in freezer until frozen.
