Yields 8 servings
1 baguette, cut into 16 slices
4 Tbsp. olive oil
½ cup Parmesan cheese
2 tomatoes, finely diced
1 scallion, finely chopped
2 avocados, peeled and finely diced
3 Tbsp. cilantro, finely chopped
1 mango, peeled and finely diced
2 Tbsp. olive oil
1 Tbsp. balsamic vinegar
Preheat oven to 350 degrees.
While oven is heating, brush slices of baguette with olive oil and top with Parmesan cheese. Toast in the oven until the slices are golden brown. Allow to cool.
Mix all other ingredients in a bowl. Place the mixture on top of the toasted baguette slices and serve.
