Not-Your-Traditional Pecan Pie

Yields 8 servings

1 recipe of your favorite pie crust or a pre-bought frozen shell (whole-wheat is the best option)

½ c. whole pitted medjool dates, finely chopped
2 c. toasted pecans
¾ c. of honey, maple syrup, agave nectar, or brown rice syrup
½ c. packed brown sugar
1 c. unrefined, unbleached flour
6 tsp. all-natural vanilla extract
¼ tsp. salt
4 large eggs

Prepare pie crust in a traditional deep dish pie plate.

Sprinkle finely chopped dates over the bottom of the crust, follow with chopped pecans. Combine agave nectar, brown sugar, flour, vanilla, salt and eggs, whisk until combined. Pour over mixture in prepared crust.

Bake at 325 degrees F for approximately 55 minutes or until top is set and when knife is inserted and comes out clean. Cool entirely before slicing.
