This is a good snack because it is quick to prepare, tasty, can travel well in your car, purse or backpack and is a great source of fiber, protein and antioxidants.
Yields 12 servings
2 cup oatmeal almond cereal
1 cup bran cereal
1 cup multi-bran square cereal
1/3 cup almonds, slivered
¼ cup walnuts, chopped
1 tablespoon crystallized ginger, chopped
¼ cup dried mango
¼ cup dried pineapple
¼ cup dried banana
¼ cup light brown sugar, packed
½ teaspoon ground ginger
2 tablespoons trans-fat free vegetable oil spread
¼ cup shredded coconut (optional)
Preheat oven to 300°. Mix cereals, nuts, dried fruits and crystallized ginger in large bowl; set aside. Add brown sugar, ground ginger and vegetable oil spread in saucepan over low heat; stir until spread is melted. Add coconut, if desired. Pour melted sugar mixture over cereal and nuts; toss with large wooden spoon to evenly coat cereal mixture. Spread onto an ungreased, rimmed cookie sheet. Bake for 15 minutes, stirring once at halfway point. Let cool and enjoy.
