Wheat Berry Salad Filled Apple

Ingredients (for 4 servings)

4 large red delicious apples
2 cups cooked wheat berry
1/2 cup of almonds
1/2 cup mandarin oranges
3/4 cup fresh blueberries (added last)
1/2 cup chopped fresh parsley
1/8 tsp. chopped fresh thyme
1/2 cup chopped green onion
1/2 cup Goji berries
1 cup micro greens for garnish
4 leaf lettuce leaves
1 tsp. honey mustard
1/4 cup of rice vinegar
1/2 cup grape seed oil
Salt and pepper to taste
Chopped apple from hollowing

Directions

First, make a dressing by mixing rice vinegar and honey mustard together slowly. Whisk in oil and set to the side. Cut 1/4 of an inch from the top of the apple (to make a top) and hollow out the apples. Save the centers, chop them up and add to the salad. Dip apples in a little lemon water to prevent browning. Put to the side.

Next, mix all ingredients together in a bowl. Add dressing and toss to cover all ingredients in the dressing. Add blueberries, salt and pepper by gently mixing them in. Take the hollowed out apples and fill them with the wheat berry salad. Place leaf lettuce on a platter and place each apple on it. Garnish the top of the apples with micro greens. Serve and enjoy!
