Yields 10 servings
2 lbs. sweet potatoes, peeled and diced
1-1/4 tsp. ground cinnamon
2-1/2 tsp. vanilla extract
10 oz. crushed pineapple, drained from can
3 tbsp. butter, unsalted
Steam potatoes until tender, approximately 15-20 minutes depending on the size of pieces.
Transfer potatoes to a mixing bowl and add remaining ingredients. Whip until smooth.
