White Bean Chili and Chicken

Yields eight 12 ounce servings


1 lb raw boneless skinless chicken breast diced
1 cup diced sweet onion
½ cup diced celery
1 ½ tsp chopped garlic
2 tbsp olive oil
½ cup small diced red pepper
4 tbps can green chilies
½ jalapeño diced fine
½ tsp cumin
½ tsp chili powder
1 ½ pound of cooked white beans (northern)
6 cups low sodium chicken broth
4 oz fat-free sour cream or fat free plain yogurt ( ½ oz for each serving)
½ cup chopped fresh cilantro


In a soup pot heat the olive oil, next add diced chicken, let brown a little then the add onions, and garlic, cook for a few minutes then add the red pepper, green chilies, chili powder, jalapeno and cumin, stir ingredients, next add the cook beans then the broth, bring to a boil and then to a simmer, cook for 40 minutes, season with salt and pepper. Ladle into a bowl and garnish with a dollop of sour cream and chopped cilantro.
