Whole-wheat Citrus-infused Apple Cobbler

Yields 8 servings


For the filling
1/3 cup sugar
1 Tbsp. cornstarch
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/3 cup orange juice
4 cups tart apples, peeled and sliced (about 4 large apples)

For the cobbler crust
1/2 cup all-purpose flour
1/2 cup whole-wheat flour
1/4 cup sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
6 tbsp. chilled butter, cut into small pieces
2/3 cup buttermilk
1/2 tsp. orange rind, grated
2 tsp. course finishing sugar (optional)


Preheat oven to 350 degrees F. Grease a 11X7 baking dish and set aside.

In a large mixing bowl, prepare the filling. First combine the sugar, cornstarch, cinnamon, nutmeg and orange juice. Add the apples and toss the coat. Transfer the mixture to the baking dish.

In a separate large mixing bowl, combine the flours, sugar, baking powder, baking soda and salt. Cut the butter into the flour mixture until a course meal is formed. Add the buttermilk and orange rind, stirring just until moistened.

Drop the dough onto the apple mixture to form little mounds. Sprinkle mounds with the remaining 2 teaspoons of course finishing sugar.

Bake for 40 to 45 minutes, until the apples are bubbly and the topping is lightly browned. Let cool for 10 minutes before serving.
