Winter Apple & Cranberry Muffins

Yields 12 muffins

½ cup pure maple syrup
1 egg
3 tbsp canola oil
¼ cup unsweetened applesauce
1 cup all-purpose flour
2 tbsp ground flaxseed
½ tsp baking powder
½ tsp baking soda
½ tsp ground cinnamon
½ tsp ground ginger
¼ cup walnuts, lightly chopped
½ cups fresh cranberries
1 ½ cups granny smith apples, peeled and diced

Preheat oven to 365°. In a large bowl, whisk together maple syrup, egg, oil & applesauce.

In another bowl, whisk together flour, flaxseed, baking powder, soda, ginger, & cinnamon. Mix in egg and stir gently. Add apples & cranberry & combine.

Scoop batter into greased or paper-lined muffin tins. Bake for 14 minutes or until a toothpick inserted comes out clean.
